This spicy shrimp fajita bowl is one of my favorite quick dinners on TikTok. Juicy shrimp and sweet bell peppers get tossed in a smoky, spicy fajita seasoning and seared in one hot pan, then topped with a handful of shredded cheese. There are no tortillas and no rice, just all the best parts of fajitas in a bowl.
It’s low carb, high protein and ready in about 20 minutes, which makes it perfect for a busy weeknight or a quick work-from-home lunch.

Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 bell peppers (orange or yellow), sliced
- 1/2 yellow onion, sliced
- 2 tablespoons olive oil, divided
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 to 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- Juice of 1/2 lime
- 1/2 cup shredded cheddar and Monterey Jack cheese
- Optional: rice or cauliflower rice, sour cream, avocado, cilantro
How to Make a Spicy Shrimp Fajita Bowl
- Season the shrimp. Mix the chili powder, smoked paprika, cumin, garlic powder, onion powder, cayenne and salt. Pat the shrimp dry and toss with 1 tablespoon of oil and about two-thirds of the seasoning.
- Cook the peppers. Heat the remaining oil in a large skillet over medium-high heat. Add the peppers, onion and the rest of the seasoning, and cook for 5 to 6 minutes until soft and a little charred. Move them to the side of the pan.
- Sear the shrimp. Add the shrimp in a single layer and cook for 1 to 2 minutes per side until pink and just cooked through.
- Finish with lime. Squeeze the lime over everything and toss together.
- Serve. Pile into bowls and top with shredded cheese so it melts over the hot shrimp. Add any extra toppings you like.
Tips for the Best Results
- Pat the shrimp dry. Dry shrimp sear instead of steaming.
- Don’t overcook. Shrimp is done as soon as it turns pink and curls into a C shape.
- Adjust the heat. Use less cayenne for a milder bowl or add more for extra kick.
- Make it heartier. Serve over rice or cauliflower rice for a bigger meal.
Storage
Store leftovers in an airtight container in the fridge for up to 2 days. Reheat gently in a skillet just until warm so the shrimp stays tender.
