These easy steak fajitas are one of my favorite weeknight dinners on TikTok. Tender strips of steak get a quick, hot sear in a smoky homemade fajita seasoning, then they’re tossed with sweet bell peppers and onions and a squeeze of lime. Pile it all onto tortillas, add a big handful of shredded cheese and dinner is done.
They come together in about 30 minutes, everyone can build their own, and the leftovers make a really good work-from-home lunch.

Ingredients
- 1 lb flank or skirt steak, sliced into thin strips
- 2 tablespoons olive oil, divided
- 2 red bell peppers, sliced
- 1 yellow onion, sliced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt and 1/4 teaspoon black pepper
- Juice of 1 lime
- 6 to 8 tortillas
- 1 cup shredded cheddar and Monterey Jack cheese
- Optional toppings: refried beans, sour cream, salsa, guacamole, cilantro
How to Make Steak Fajitas
- Season the steak. Mix the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt and pepper. Toss the steak strips with 1 tablespoon of oil and the seasoning.
- Sear the steak. Heat a large skillet over high heat. Sear the steak in a single layer for 2 to 3 minutes until browned, then move it to a plate.
- Cook the peppers and onions. Add the remaining oil, peppers and onion to the same pan. Cook for 5 to 6 minutes until soft and a little charred.
- Bring it together. Return the steak to the pan, squeeze in the lime juice and toss to coat.
- Warm the tortillas. Heat the tortillas in a dry skillet or the oven until warm and a little crisp around the edges.
- Serve. Pile the steak and peppers onto the tortillas, top with shredded cheese and add your favorite toppings.
Tips for the Best Results
- Slice against the grain. This keeps flank or skirt steak tender.
- Don’t crowd the pan. Sear the steak in batches so it browns instead of steaming.
- Get the pan really hot. That’s how you get the charred, sizzling fajita flavor.
- Marinate ahead. Season the steak up to a day ahead for even more flavor.
Storage
Store the leftover steak and peppers in an airtight container in the fridge for up to 3 days. Reheat in a hot skillet and serve on fresh, warm tortillas.
