Everything here is something I actually make in my own kitchen on regular weeknights: saucy pastas, one-pan skillets, spicy bowls and a few comfort-food classics. Most of them are packed with protein from chicken, shrimp, steak or salmon, and none of them need fancy equipment.

These are the dinners I find myself making on repeat. Here’s what makes each one worth trying.
Blackened Chicken with Zucchini and Mushrooms
Smoky, well-seasoned chicken and a pan full of zucchini and mushrooms seared until they’re caramelized at the edges, all piled over creamy mashed potatoes. It tastes like a restaurant plate but it’s really just one hot skillet and a good spice blend.
Spicy Shrimp Fajita Bowl

Shrimp and sliced peppers coated in a smoky red spice rub, spooned over black beans and finished with a handful of shredded cheese. It’s everything you love about fajitas without having to fold a single tortilla, and it all comes together in one pan.
Creamy Cajun Shrimp Bowtie Pasta

Bowtie pasta in a creamy Cajun sauce with plump shrimp and chunks of red and yellow bell pepper. Every little pasta fold holds onto the sauce, which is exactly why bowties are the right shape here.
One-Pot Chicken and Chickpea Orzo

Chicken, chickpeas and orzo simmered together in one pot until the orzo turns rich and creamy, almost like a risotto. The chickpeas bump up the protein and fiber, and there’s only one pot to wash afterward.

Creamy Tuscan-Style Chicken over Sweet Potatoes

Seasoned chicken bites in a creamy sauce with spinach, red peppers and mushrooms, spooned over crispy roasted sweet potato cubes and finished with parmesan. It’s hearty and filling without any pasta or rice.
Steak Fajita Tostadas

Crispy tostada shells layered with refried beans, seasoned steak strips, charred peppers and onions, salsa and plenty of shredded cheese. Crunchy, messy and completely worth it.
Spicy Bacon Mac and Cheese

Cavatappi pasta in an extra-creamy, well-seasoned cheese sauce with crispy bacon folded through. The corkscrew shape grabs every bit of sauce, and the little kick of spice keeps it from being just another boxed-mac dupe.
Curry Chicken with Chickpeas, Potatoes and Roti

Tender curry chicken simmered with potatoes, chickpeas and plenty of onion, served over rice and peas with a soft, flaky roti on the side and a drizzle of hot pepper sauce. This one is pure comfort, and the roti is made for scooping.
